In the fields of Tognetti's family estate, both standard grains and ancient grains are cultivated. The ancient grains, often lost in time, are part of Tuscan tradition; they have remarkable nutritive value and contribute to biodiversity.

 

The mill

Grains grinding is carried out inside the Mill. This is a latest technology mill combining the newest machinery with an old traditional grindstone, giving a product that is a perfect mix of tradition and modernity to get better quality
