Old family recipes and animals living in the woods. These are the secrets of our special salami.

 

Farm breeding

Our farm breeding is a closed circuit and at the moment there are about 1000 animals (mainly Cinta Senese, but also wild boar and Italian pig). Their feeding is made of a flour blend grinded in the mill located inside our farm.
They also find a part of their daily ration in the woods, mainly acorns and chestnuts.

 

Cured pork meat factory

Our cured porke meat factory is a very modern building and has a selection room. The meat coming from Cinta Senese, Italian pig and wild boar is processed here.

A part of the production includes fresh meat cuts directed to local butchers and the other part is processed to make traditional Tuscan salami, according to the traditional family recipes rich in local spices.

Salami are aged into cells and stored until they are sold, or cut into pieces and vacuum-packed. The building has also a white room for cutting and packaging in ATP (inert atmosphere)

 La Cinta Senese DOP

 

La Cinta Senese

This is an ancient breed coming from Montemaggio (Montagnola Senese) and Chianti hills. Nowadays it is present all around Tuscany .
Thanks to the effort of many breeders, and with the help of Siena Breeders' Association, this breed is still alive. At the moment there are 80 breeding farms all around Tuscany. Recently Cinta Senese pork has obtained DOP certification. Cinta Senese pig is identifiable by the white stripe around its belly and its legs.

 

Our allevamento

In this context Tognetti's family owns one of the most important DOP farm breeding. There are only a few farms that process their own meat by short distribution chain. Pork meat and lard are high quality and this is because of the peculiarity of their wood enclosures and special feeding.

Processed according to the old traditional family recipes, Tognetti's salami have a very special taste.

Il Rustico di Montaione

Wood enclosures in Poderi Tognetti host also Italian pigs and they are bred with the same attention given to the "noblest" Cinta Senese pigs. "Rustico di Montaione" is the name of this pig producing a very special pork.

Combining the meat coming from the wood enclosures with Cinta Senese lard, that is a specialty, we get a gentle taste salami. Obviously ,they have a different flavour from 100% Cinta Senese salami.

Wild boar

Tuscan countryside areas and woods are always been the wild boar's house. Tuscan wild boar is a very resistant animal living mainly on undergrowth and plants. In our farm they live freely in the big wood enclosures.

Wild boar salami have a very strong and special taste. According to the family's recipes, they are refined by lard addition.
